Real chef knives - show and tell

Last night, I bought a Dirtknap WR Case knife on Etsy, and I’m eagerly waiting for it to come, since it looks perfect !

Thinking of it and being “the” chef at home - my wife doesn’t complain -, I own a few real chef knives on my kitchen counter. This one is the biggest : an inox Sabatier 62, 12".

I bought it nineteen years ago in Southern France for about 600 francs (more or less 95 euros/100 dollars), which was quite expensive for the student I was then, but I never regretted it, it served me well all this time.

I did carve my left middle finger with that knife while cooking a Christmas dinner a few years back (the meal was much tastier after that :slight_smile: … just kidding).

This morning, while wandering around Paris, I stopped by a kitchen appliances store and found an even bigger one, a 35 cm (14") blade. Truly nice too, and cheaper than I thought (115 euros/125 dollars). No need for the moment, first time I ever grabbed such a big knife though !

To be frank, since I’m a true crime historian for the last two decades, it’s only when you hold a knife that big that you can truly imagine the damages inflicted by Myers to his victims. Chilling.

Anyway, how about yours ?

Case, Lamson, Dexter, other brands (preferably), let’s show them !

By the way, do some of you did cook with their vintage Case & Sons ?

Very nice cutlery there. I do not own any real chef’s knives however I do have a really nice JC Lamson copy. I would love to own a real WR Case just like in H1 but I know they are super hard to find. I do have a real 3L scalpel handle and blades (not vintage).

Besides Halloween I do have a small collection of real edged weapons from other horror films. Hoping to make a nice display case for them sometime soon.

I have a 14" bladed chef knife stamped Alacroix its pre-Sabatier. Its funny it looks like the older model of your knife :laughing:
It looks the exact same but pre-rivets I guess, its full tang with a peened end on the handle
I soaked it in 10% vinegar overnight 75% of the rust came off it polished up nice
I know what you mean about true crime, this thing feels like something Jack the ripper could wield its so heavy.

I scored a vintage RH Forschner 8" blade for my Halloween 6 outfit with the lighter colored rosewood handles.

I have two Dexters as well but I dont know if you would count them/want pics. I modified both of them.
One Im turning into the H4 knife.
Its a 10’’ blade so I blew up a picture of the H4 knife and traced out the blade shape onto the Dexter.
I ground down and re-profiled the whole blade it was really wide. I stained the handle/dulled it too.
All I need to do is paint in the clover rivet on the one side.

These were both vintage 10" dexters both mint. I ended up grinding/reshaping the blade for an H4 knife.
After that I dulled it and weathered it by misting black paint on it and scuffing it off w/ steel wool.
The knife is only 10 inches but its so thick and heavy.

Yep! Lol I somehow got mine for $100. A 10”, the screen used size, hasn’t sold for a a while to my knowledge and the only ones on eBay now are like $700.

I just bought another 14" chef knife off Amazon ca for $170. Its set to arrive on the 16th.
I’ll take pics of all the real chef knives together when it lands.
It would be a great stand in for the H20 knife for a fraction of the real deal Wusthof

I got the Paderno chef knife Saturday, the blade is over 14" inches long. I dulled it upon arrival, and misted gloss black spraypaint onto it then scrubbed it w/ steel wool the next day for light weathering. This thing is heavy and thick :myers:

Its a huge beast! Bigger and heavier than my antique 14" chef knife. If anyone needs an alternative H20 knife
this one is atleast affordable, the Wusthoff is like 700 usd

Found this knife at my neighbors house while I was visiting there… it reminds me of H4

Very close! Just a size off but it’s the same brand as the stunt knife.

I took this picture at the Police Museum of Paris today. Thought it has its place here.

This knife #4, compared to each ever shown on this forum, is very particular, because it was used for a crime…

In 1882, in Paris, there lived a 21-year old guy named Eugène Martin “Emile” Zurcher, who worked along his father in a piano factory. Though he was intelligent and a smart pupil at school, in the neighborhood, given his muteness and feral personality, everybody was sure he had severe mental issues. They were right.
In 1881, arrested for theft, he threw such a fit that he was finally considered as dangerously insane, and committed for a few months in Sainte-Anne asylum.
Being freed, he decided to kill both his parents, both wishing to avenge himself (?) and hoping to be sentenced to death !
He found a 12" butcher’s knife - some said he did built it by himself - and every day, he sharpened it while promising Marguerite, his terrified mother, that soon he would use it on her.
During the afternoon of July 6th 1882, after his father was gone to his job, he took off his shoes and approached his mother silently before attacking her.
He stabbed her first on the left shoulder, then two other times - some newspapers say four times - on the nape of the neck and on the left hand.
She cried for help at the window : a policeman and a few neighbors did came to her rescue, arresting the young man, who remained stiff in the middle of the room, quietly answering to all the questions and even peacefully picking his knife on the ground before giving it to the policeman.
Rushed to the hospital in a critical condition, the poor mother said she forgave her son !
Against all odds, she survived.
On November 28th, 1882, Zurcher was sentenced to life.
He probably was committed again after that, since I didn’t find any trace of his transportation to the penal French colonies, nor any death certificate…
